Piroshki

Today we are learning how to make Deep Fried piroshki with 3 different fillings. It does not get better than this. It’s definitely one of my comfort foods. We will make a meat, mashed potatoes and cheese filling.

Directions:
1. Make Poolish. Mix all the ingredients and let it sit on yogurt setting gin instant pot for 15 mins with lid closed. A poolish starter is basically water, yeast, sugar, and buttermilk. You will see the bubbles inside, it should look like a sponge.
2. Then add the remaining ingredients for the dough and knead for 5 mins. Place in the instant pot on yogurt for 30 min -1 hour or until doubled in size. The dough is very soft when you start working on it.
3. As the dough is rising, we will start making our filling. Grind your meat and onion, add salt and pepper. Meat filling is done.
4. The second filling we will get mashed potatoes, dill, green onion , parsley, and sautéed onion.
5. The third filling we have cottage cheese, White salty cheese in brine, dill, green onion, parsley, 1 egg.
6. Once all of your fillings have been prepared, your dough should be ready.
7. Get 1/4 of your dough out on slightly oiled counter top. Cut into small pieces like so and flatten out with your hands.
8. Add filling mixture inside and close (as shown in video).
9. Heat up your oil, and fry piroshok on medium for about 5 mins per side.
10. Remove and place on a paper towel to soak up excess oil.
11. Enjoy!!!
*You can also reheat these in a air fryer.

Poolish:

150 g flour

Dough:
All poolish
50 ml warm water
1 tsp salt
2 tbsp oil
350 g flour

Meat Filling:
1 lb meat
1 onion
1 tsp salt
1 tsp pepper

Potatoes Filling:
Mashed potatoes
Dill
Green onion
Parsley
Sautéed onion

Cheese Filling:
1 lb cottage cheese
1 lb white salty cheese in brine
Dill
Parsley
Green onion
1 egg
